Healthy breakfast – salty cake with cheese

Together with Daniel, we have decided to eat healthy, low carb foods. Many of our friends are trying to avoid all carbs and they are all saying how good is that, so based on my researches and I have decided to at least give it a shot? We are also trying to avoid the sugar as this is a well-known “bad” food and moreover, sugar is not really good for my seborrhea (oh, yeah, I got that shit couple of years ago and we’re living together “happily” ever after since then).

One of our weekend routines was having a big, fat (fabulous) Starbucks coffee and eating something really “healthy” like pancakes 🙂  And before you even start explaining to me how bad is my Starbucks – save your time – I do know everything you could bring on, and I’m fully aware of your concerns. I’m also really happy every single time when I have my coffee with my boy and would prefer that instead of everything you could offer.

A couple of weeks ago, after having my coffee, I have prepared a healthy low-carb cake with cheese. Read that twice – it is low-carb, not zero-carb. Initially, I took the receipt from Healthy with Deni’s blog (here you can find her receipt) but I have adapted it together with the receipt I know from my mom. It is really easy I promise. You have to buy the following ingredients:

  • einkorn flour (~200 grams) – 3 to 4 BGN for 300-500 grams package
  • flaxseed flour (~100 grams) – 3 to 4 BGN for 300-500 grams package
  • cheese (~150-200 grams) – 7 to 10 (or more) BGN per kilo
  • 3 eggs – 2 to 4 BGN for 6 to 12 eggs pack
  • yogurt (~250-300 grams) – up to 2 BGN for 400 grams box
  • baking soda (a teaspoon) – up to 1 BGN for a package (~20 teaspoons)
  • olive oil (2 tablespoons) – 15 to 20 BGN per kilo

You will also need baking paper along with middle-sized pan.

What to do?

  1. Have your time and have your favorite coffee in the morning before you even start.
  2. Find some middle-sized bowl and one good old paddle.
  3. Put the yogurt into the bowl together with the baking soda and mix them up. Leave them for a minute or two, and turn the music on meanwhile (I recommend you this song).
  4. Put the eggs and the olive oil into the mixture above. Mix.
  5. Add the crumbled cheese and both of the flours. Mix.
  6. Turn the oven to 190-200 degrees and find the pan.
  7. Put the baking paper into the pan and fill it with the mixture of the bowl.
  8. Bake till brown.
