Where are you?

Hello, there! If you were wondering where the hell was I for the last I don’t know – 10 years? – answer is pretty simple and significantly complex. We had a baby! Believe it or not, last year I was going through an emotional break down. These days they call it burn out. That is why I didn’t  wrote anything here for months. I had a lot of troubles in my previous job, mostly because I wasn’t able to agree with stupidity (this is something I’ll tell you more later on). Meanwhile I had some health issues, and the very same day I got the sneaky feeling that everything is falling apart – I signed my resignation. Waiting for the results of my medical tests were pretty much the toughest days in my life. Really. It came out that I was fine, so I took deep breath and started a new job – different than the one before, in a different business direction, and most importantly – home based. I needed time to heal. I needed rest, for my body and my soul, so I signed a contract with the smallest salary ever and enjoyed the coziness of my living room and sofa. For those about to rock in Germany

I don’t quite remember when it started, but as long as I remember something, as of the first day of my childhood, deep down there in my memories, I was always listening to music – and it was always rock’n’roll. My father have taught me what classic rock is, what speed is, what metal, trash, punk are, actually – he taught me everything about the whole specter called ‘rock music’. I grew up with Led Zeppelin, Ozzy Osbourne, Van Halen and Deep Purple and I have always been ‘that kind of girl’ 🙂 Commercial music, girls or boys bands have never attracted me. Daniel didn’t have the chance to learn for the classic rock music as of the beginning, but he has always been ‘that kind of boy’. I think that this actually sum up everything between us – we were (and still are) that kind of guys 🙂 So let it rock. One of my biggest dreams have always been to visit some of the greatest European rock festivals during the summer (Download, Rock am park, Rock am ring, etc.). After careful consideration and calculation, it turns out that we’re not gonna make it for big festival this year. But we could definitely at least check some of the groups that are touring Europe through the summer. /something to add here – some of our favorite bands are Americans, therefore they only tour in Europe from time to time, and this is the only way we could see/hear them live. May in Ireland

It’s time to travel once again 🙂 This time we’re going to Ireland (Dublin and around) to check if it’s true that Irish weather could gather the whole four seasons in a day. Let me save your time wondering – yes, it can and it’s on and on – four seasons in a single day every day  🙂 Having in mind that, I have just checked for the best price for our flights and didn’t actually consider weather forecast. I was not disappointed, as mentioned above, weather was exactly what we’re expecting – rainy, shiny, windy, coldly, warmly and so on. Whenever you’re wondering if you should take this jacket in mid May in you luggage – yes, you should. If you should take spare pair of shoes – yes, you should. If you should take couple of light T-shirts – yes, you should. Basically you should pack everything, except the swimwear 🙂 We have booked small flat through airbnb once again – everything was perfectly fine. Just to mention that hotel prices in Dublin are almost insane, as in Copenhagen in Denmark. Otherwise, prices in Dublin are pretty decent, not really expensive and much cheaper than I expected. Which was of course, a good surprise for us. Souvenirs and other stuffs not so much, but overall pricing in Ireland is pretty fine. Dublin itself is not really big city, especially compared with other European capitals. Tasty ribs with green salads

In case you’re checking my blog from time to time, you’ll most probably think that my poor cooking skills are able to create chaos and breakfasts only. But actually I’m cooking mostly dinners, as during the work week I’m working (so – no time for cooking whole day), and in the weekends we’re having brunches somewhere out (after our morning cafe in Starbucks of course). Well, during the work week, and especially evenings, I’m too tired (and too lazy) to cook anything fancy, so my dinner lists were short, simple (you know my taste for simple things) and unpretentious (omelettes, zucchini souffle,  salads, some small dishes in ceramic pots) but in the weekends I’m challenging myself to bit more sophisticated meals. One of the tuffest challenges I had past few years was to prepare nice and tender, juicy meat (steaks, ribs, chops, etc). I have tried couple of times but the results were poor to tragic. Meat was dry, tough, burnt and tasted like a shoe sole. Or brick. Friends and relatives were saying ‘Come on, this is the simplest thing ever’ and ‘Did you try to… (whatever)?’. Low carb coconut flour cheese muffins

I was inspired by one of my friends to do something with coconut flour and cheese. She made really nice low carb cheesy cake named ‘milinka’ (Bulgarian) and I was going to do the same, but found out that I don’t have one of the ingredients needed, so accidentally I did low carb muffins instead of milinka.  As you know, we’re trying to eat healthy and especially to avoid any refined white flours with high glycemic index. Most of the time I’m using wholemeal and einkorn flours, a lot of spelt flour (dinkel) or oatmeal, oat or flax bran – these are having approximately the same consistency as the regular white flour, but are not refined and are better for our bodies. Coconut flour on the other hand is specific, having totally different consistency and taste than the rest of the flours mentioned above. Cooking with coconut flour is different and there are more aspects to be taken under consideration than just replacing one flour with other.  Having that in mind you most probably know that every receipt with coconut flour contains a lot of other liquid ingredients, as this flour absorbs a lot.
