Blueberry oatmeal muffins

Those muffins are specially made for those Sunday afternoons when you want something nice, sweet and healthy 🙂 As all the rest, this recipe is really simple and the whole cooking time prior baking takes no more than 10 minutes. Have in mind that you need ~30 minutes in addition before baking while oat should soak the ingredients and should rest. Speaking of ingredients, here are them: half tea cup einkorn flour (~120-130 grams) – 3 to 4 BGN for 300-500 grams package half tea cup of fine oat flakes (~120-130 grams) – 2 to 3 BGN for a kilo package 1 egg – 2 to 4 BGN for 6 to 12 eggs pack yogurt (~250-300 grams) – up to 2 BGN for 400 grams box baking soda (a tea spoon) – up to 1 BGN for a package (~20 tea spoons spoons) olive oil (2 tablespoons) – 15 to 20 BGN per kilo half tea cup or 2/3 of tea cup (depends on your taste) natural brown sugar – up to 5 BGN per half-kilo package vanilla pod – up to 10 pieces for 1 BGN What to do? Coconut flour cocoa muffins

I’m not really good with the deserts. By ‘not really good’ I mean I really suck in deserts. For the time being, I have thrown to the trash 3 or 4 trays, at least 2 cake forms and a couple of muffin forms. All of them together with the ‘desert’. Some of the deserts I burnt, some of them didn’t even become deserts and the rest weren’t good to be eaten at all. I have tried some recipes that were in ‘easy’ category of some cookbooks, and some that were looking ‘easy’ to be made. I didn’t succeed at all. I mean, I wasn’t even close to the average result, more likely I was in poor to a tragic level. Well, today I have made coconut flour muffins with cocoa, and they almost tasted really good 🙂 I liked them, and moreover, they are all gone now so I suppose they were good. If they weren’t – even Daniel wouldn’t have eaten them, no matter how much he loves me. And if this is not enough for you, these muffins are healthy! Healthy banitsa

If you have ever been to Bulgaria, you surely know that there are a couple of typical Bulgarian dishes you should try. Banitsa, together with other meals, is one of our main and super-widespread foods. It is kinda multi-layer pastry with a variety of stuffing. It could be made of raw or pre-cooked layers of dough, one above the other or wrapped in circles. Plus there are a lot of variations, starting with small banitsa that you could buy in almost every shop everywhere, reaching to some really interesting (and tasty) types of banitsa with apples, pumpkins,  and even with leeks. There are sweet and salty kinds of banitsa, and there is also a milky banitsa. Honestly, I don’t know even a single person here who has never eaten a banitsa and haven’t liked it. This is just one of those things that everybody loves 🙂 As you can imagine, layers and layers of dough is not the healthiest thing you could choose from the menu, especially if you’re trying to eat less carbs. Oatmeal muffins

It was a lovely spring Sunday morning (I know that I’m writing that in July, but… well, I’m a busy woman 🙂 ). So, it was Sunday, and we went on a walk in the park nearby and when we got back I was carrying with me a big lilac bouquet. I was feeling really nice and happy cause of the walk with my boy, so I decided to make something nice for our traditional brunch. I found an easy receipt for oatmeal muffins and modified it a bit, cause of my double left-handed syndrome 🙂 What do you need for the oatmeal cheesy muffins (except big lilac bouquet)? Zucchini souffle

My office was in one of the most popular and nicest places in Sofia –  Iztok district. Iztok means East in English, and the name have not been chosen just like that – Iztok is great, shiny place to work, live and have fun. There is also one more thing for Iztok – it is one of the most expensive districts in Sofia. Working there is great cause of the location (great public transport), numerous of green areas (parks and gardens) and last, but not least – there are a lot of food corners, restaurants, cafes and shops. You can work and meanwhile complete a lot of your daily to-dos in your lunch break (like shop, pay bills, use carrier, go to hairdresser or have a cup of coffee with friends). One of the things you can not do is to save money. But you can actually gather a lot of good ideas how to find (or prepare) something cheap 🙂  I had zucchini souffle in one of my lunch breaks couple of weeks ago, so I thought it is a good idea for a healthy dinner.
